Minestrone (Italian vegetable soup)

This is the typical Italian Minestrone soup recipe. It is good served hot…but many people also like it served cold (ambient temp.)…Try and decide yourself đŸ˜‰


  • 1 and a half liter of water
  • 2 clove of garlic
  • 4/5 leaves of basil
  • 2 carrots
  • 1 onion
  • 2 vegetable soup cube
  • 1 can of beans
  • 2 potatoes
  • pepper (minced)
  • salt (as needed)
  • 3 sticks of celery
  • 50 grams tomatoes
  • 1 sprout of parsley (chopped)
  • 2 zucchini
  • extra virgin olive oil
  • parmesan
Peel potatoes and dice them. Also dice carrots, tomatoes (take out seeds), celery and zucchini. Peel onion and garlic and chop them.
Boil water. When boiling add salt and the 2 soup cube.
While water is boiling, add all the vegetables you just prepared and also add the can of beans. Boil everything for 40-50 minutes: in the meantime chop the parsley and slice the basil…10 minutes before turning off the flame, add them and adjust of salt.
Serve and garnish with a bit of extra virgin oil and, if you like it, parmesan đŸ˜‰
