Vegetable Quiche

Ingredients:

  • 6 eggs
  • 1 c. semi-cooked chopped broccoli (or spinach)
  • 1 c. chopped mushrooms
  • 1/2 c. chopped green onions
  • 1 c. grated Cheddar cheese (or Swiss if using spinach)
  • 2 tbsp. flour
  • 1/2 c. milk
  • Salt & pepper
  • 1 9″ pie shell

Preparation:

Beat eggs well. Stir in vegetables, mixing well. In separate bowl mix cheese with flour and add to vegetable mixture. Add milk last and mix well. Pour into pie crust. Bake at 350 F degrees for 1 hour. To test insert knife. If it comes out clean, quiche is done.
